"Flare Free": gluten/dairy/sugar/corn/soy/peanut-free and anti-inflammatory comfort food

I made these delicious Smashed Potatoes for my clients last week and they were so good I had to make them this weekend when I had company over!
We paired them with the Rosemary Garlic Lamb Burgers from the September "30 Minute Meals" Meal Plan from my self-paced course, "The Autoimmune Edible Rx", some Lemon Roasted Broccoli and a fall inspired Apple Cranberry Walnut Salad!
This meal was a 10 out of 10! We all had seconds! A must-try!! 🫶🏼
SMOKED PAPRIKA SMASHED BABY POTATOES WITH EGG-FREE AIOLI
(c=cup; t=teaspoon; T=Tablespoon)
Serves 4-6
INGREDIENTS:
POTATOES:
1 bag of baby potatoes
Organic smoked paprika to taste
Organic grass-fed ghee to taste (about 1 T), melted
Fine Himalayan salt and ground black pepper
AIOLI:
1/2 c soy-free Vegenaise
1/4 lg. lemon, juiced
Fine Himalayan salt to taste
INSTRUCTIONS:
Place potatoes on an unbleached parchment paper-lined baking sheet. Spray with avocado oil then season with salt and pepper. Broil on the bottom shelf of the oven on high for about 15-20 minutes until fork tender.
While potatoes are cooking, mix all the ingredients for aioli in a small bowl. Taste and adjust seasoning then set aside.
Smash potatoes on the sheet tray with the bottom of a heavy-bottomed glass or mason jar until 1/2" thick and line up side-by-side.
Sprinkle with smoked paprika then drizzle with melted ghee and broil on the middle rack of the oven for about 5 minutes until cooked to your liking. Taste and adjust seasoning then serve with aioli.
NOTES: If you have a severe dairy allergy, omit the ghee. It is lactose and casein free but may contain small traces of dairy.
