Disclaimer: This post contains affiliate links. We make this in individual portions in our electric milk frother but you can make the x4 recipe below in a pot!
These are my favorite marshmallows for topping but you can also use leftover whipped coconut cream from the No Bake Chocolate Cherry Cheesecake Cups from my Holiday Baking E-Book if you like coconut.
SINGLE CUP RECIPE:
1 c unsweetened soy-free plant milk (vanilla flavored plant milk would be awesome too!)
1 T organic unsweetened cacao powder
1 T monk fruit sweetener Tiny pinch of sea salt
Optional Toppings: No Sugar Added Marshmallows, whipped coconut cream, cinnamon, stevia sweetened chocolate chips, etc.
Place half of the milk in an electric milk frother. Add cacao powder and monk fruit sweetener then turn on high. (If you put the cacao and monk fruit in before the milk, it will stick to the bottom of the frother.)
Pour into a cup then froth the other half of the milk on high and add to your cup. Stir to combine then taste and adjust flavor by adding more monk fruit sweetener if you want it sweeter, more milk if you want it less sweet, or more chocolate if you want it more chocolaty.
Top with marshmallows, chocolate chips, cinnamon, etc.
FOUR CUP RECIPE:
1 qt. unsweetened soy-free plant milk (vanilla flavored plant milk would be awesome too!)
1/4 c organic unsweetened cacao powder
1/4 c monk fruit sweetener
Pink of sea salt Optional Toppings: No Sugar Added Marshmallows, whipped coconut cream, cinnamon, stevia sweetened chocolate chips, etc.
Place all ingredients in a stainless steel or enameled cast iron pot and bring to a gentle simmer. Whisk until no lumps remain and monk fruit sweetener melts then taste and adjust flavor by adding more monk fruit sweetener if you want it sweeter, more milk if you want it less sweet, or more chocolate if you want it more chocolaty.
Divvy up between 4 mugs and top with your favorite toppings!
NOTE: Have fun with it! Get creative with your toppings and let the kids garnish their own however they wish!
