Quinoa is a great source of protein, fiber and minerals - making it a great addition to your next Taco Night Dinner!
Try this amazingly delicious recipe I created for my client yesterday:
Fiesta Quinoa Salad Recipe
1 lg. organic vine ripened tomato, diced small
1/4 c diced red onion
2 T minced cilantro
1 1/2 lg. limes, juiced
2 1/2 c cooked organic quinoa, cooled
3 lg. radishes, quartered and sliced thin
1 medium ripe avocado, diced small
Sea salt and ground black pepper to taste
Place tomatoes and the next 3 ingredients in a large bowl. Season to taste with salt and let sit for about 10 minutes sit until the tomato juices release (this will create a bit of a sauce for your quinoa salad).
Add remaining ingredients to the bowl and toss to combine.
Taste and adjust seasoning by adding more of anything you'd like to taste more of, then serve with your favorite tacos.
Lasts 3 days in the fridge.
Short on time? Skip the first step and just add store bought organic pico de gallo with some of the juices to the quinoa instead!!
